The third installment of this series comes to us by way of Dr. Aaron Mckim, also notable as the organizer of the fire performance at the Lantern Festival every year, and ex of Motion Sickness, an epic juggling duo of days gone by.

A father of 3 whose partner is also a physician, Aaron somehow manages to keep his family farm in St. Phillips running at a basic level with the help of friends to get some good food for them all and to keep the land agricultural so that his kids may have the option to farm it. He contributes 2 recipes, one from his mother and one from his wife’s mother.

Rhubarb Shrub

2 lbs. cut up rhubarb
1 lemon – sliced
Sugar (up to 1 1/2 cups.. we use 3/4 cups)
5 cups boiling water
4 oz. orange juice

Pour the boiling water over the cut up rhubarb, the lemon, and the sugar in a bowl.
Let it steep for 24 hours.
Strain and add 4 oz. of orange juice.
Chill.
Adding a bit of white wine to your glass is good, too.

Zucchini Curry for Two

2 big Zucchini
1 big Onion
3 tsp Coriander powder
1/2 tsp Turmeric powder
2 tsp Tamarind paste
3 tsp Chilli powder
1 1/4  tsp Salt
4 tbs Oil

Wash Zucchini and cut into 1 inch long pieces.
In the food processor add cut up onion, coriander powder, turmeric powder, tamarind paste, chilli powder and salt and mix it well.
In a non stick fry pan heat up the oil and add cut up Zucchini pieces and Onion Mixture.
Cover it for couple of minutes and take out the cover, add salt and fry it for 10 minutes.
